A light, flavorful, and low-calorie pink gelatin recipe perfect for a diet. This simple dessert is satisfying and can be customized with various sugar-free flavors, bringing back childhood joy without the guilt.

  • Total Time: 4 hours 20 minutes (includes chilling)
  • Yield: 8 servings 1x

Ingredients

Scale

4 packets (0.3 oz each) sugar-free gelatin, strawberry or cherry flavor
4 cups boiling water
4 cups cold water
1 cup fresh or frozen mixed berries (optional, for garnish)
Sugar-free whipped topping (optional, for garnish)

Instructions

Step 1: Boil the Water. Bring 4 cups of water to a rolling boil. You can do this in a kettle or a saucepan on the stovetop.
Step 2: Dissolve Gelatin. In a large heatproof bowl, empty the contents of the 4 packets of sugar-free pink gelatin powder. Carefully pour the 4 cups of boiling water over the gelatin powder. Whisk continuously for at least 2-3 minutes, or until the gelatin powder is completely dissolved. Ensure there are no granules remaining at the bottom of the bowl.
Step 3: Add Cold Water. Pour in the 4 cups of cold water into the dissolved gelatin mixture. Stir well to combine. The cold water helps to cool down the mixture and prepares it for setting.
Step 4: Prepare for Chilling. You can pour the gelatin mixture into a large serving bowl, individual dessert cups, or a 9x13-inch baking dish if you plan to cut it into cubes later. For easy portioning, individual servings are often preferred.
Step 5: Chill Until Set. Place the bowl(s) or dish in the refrigerator. Chill for at least 4 hours, or until the gelatin is firm and fully set. For the best results and a perfectly jiggly consistency, chilling overnight is often ideal.
Step 6: Garnish and Serve (Optional). Once set, you can cut the gelatin into cubes if using a baking dish. Serve plain or garnish with fresh mixed berries (like strawberries, raspberries, or blueberries) and a dollop of sugar-free whipped topping. Enjoy your refreshing treat!

Notes

For best results, ensure the boiling water fully dissolves the gelatin powder before adding cold water. The longer it chills, the firmer the gelatin will be. This recipe is highly customizable with different sugar-free flavors and low-carb fruit additions.
