1 can (20 oz) crushed pineapple in juice, undrained
5 cups white bread cubes (about 1-inch pieces)
1/4 teaspoon salt
Instructions
Step 1: Preheat your oven to 350°F (175°C) and lightly grease a 2-quart baking dish.
Step 2: In a large mixing bowl, cream together the softened butter and granulated sugar until the mixture is pale and fluffy.
Step 3: Add the eggs to the butter mixture one at a time, beating well after each addition to ensure they are fully incorporated.
Step 4: Stir in the undrained crushed pineapple and the salt, mixing until the liquid is evenly distributed.
Step 5: Gently fold in the bread cubes using a spatula until all the bread is thoroughly moistened by the pineapple mixture.
Step 6: Transfer the mixture to the prepared baking dish and bake for 45 to 50 minutes, or until the top is golden brown and the stuffing is set in the middle.
Notes
For a richer flavor, use brioche or challah bread. Do not drain the pineapple juice, as it provides the necessary moisture.
