1/2 cup light brown sugar, packed
2 tablespoons cornstarch (or all-purpose flour)

For the Crumble Topping:
1 cup all-purpose flour
1 cup old-fashioned oats
1/2 cup light brown sugar, packed
1/4 cup granulated sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup (1 stick) unsalted butter, cold and diced

Instructions

Step 1: Preheat oven to 375°F (190°C). Lightly butter a 9x13 inch baking dish or an 8x8 inch square dish.
Step 2: In a large bowl, gently combine the sliced peaches, 1/2 cup brown sugar, cornstarch, lemon juice, vanilla extract, 1 teaspoon cinnamon, and nutmeg. Toss to coat evenly. Allow to sit for 10-15 minutes.
Step 3: Pour the peach mixture into the prepared baking dish and spread evenly.
Step 4: In a separate medium bowl, combine the flour, oats, 1/2 cup brown sugar, granulated sugar, 1/2 teaspoon cinnamon, and salt. Mix well.
Step 5: Add the cold, diced butter to the dry ingredients. Using your fingertips, a pastry blender, or a fork, cut the butter into the mixture until it resembles coarse crumbs with some pea-sized pieces remaining. Do not overmix.
Step 6: Sprinkle the crumble topping evenly over the peach filling.
Step 7: Bake for 40-50 minutes, or until the topping is golden brown and the peach filling is bubbly and tender. If the topping browns too quickly, loosely tent with aluminum foil.
Step 8: Let the crumble cool for at least 15-20 minutes before serving. Serve warm, preferably with vanilla ice cream or whipped cream.
