Ingredients
1.25 cups All-purpose flour
1/2 cup Unsalted butter, chilled and cubed
1 tbsp Granulated sugar
1/2 tsp Salt
3-4 tbsp Ice water
4 large Fresh peaches, sliced
2 tbsp Cornstarch
3 tbsp Honey
1 Egg (for egg wash)
1 tbsp Turbinado sugar
Instructions
Step 1: In a large bowl, whisk together the flour, sugar, and salt before cutting in the cold butter until the mixture resembles coarse crumbs.
Step 2: Gradually add ice water, one tablespoon at a time, until the dough just comes together. Wrap in plastic and chill for at least 30 minutes.
Step 3: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Step 4: Toss the sliced peaches with cornstarch and 1 tablespoon of honey in a medium bowl.
Step 5: Roll out the chilled dough into a 12-inch circle on a floured surface and transfer it to the prepared baking sheet.
Step 6: Arrange the peaches in the center of the dough, leaving a 2-inch border. Gently fold the edges of the dough over the fruit.
Step 7: Brush the crust with the beaten egg and sprinkle with turbinado sugar.
Step 8: Bake for 30-35 minutes until the crust is golden brown and the peach juices are bubbling.
Step 9: Drizzle the remaining honey over the warm fruit before serving.
Notes
Always use cold butter for the flakiest crust. Ensure peaches are ripe but firm enough to hold their shape.
