Ingredients
6 large fresh peaches, sliced
1/4 cup local honey
1 tsp vanilla extract
1/2 tsp ground cinnamon
1 cup rolled oats
1/2 cup all-purpose flour
1/2 cup brown sugar, packed
1/2 cup unsalted butter, cold and cubed
1/4 tsp salt
Instructions
Step 1: Preheat your oven to 375°F (190°C) and lightly grease an 8x8 inch baking dish.
Step 2: In a large bowl, toss the sliced peaches with honey, vanilla, and cinnamon until well coated.
Step 3: Transfer the peach mixture into the prepared baking dish, spreading them out evenly.
Step 4: In a separate bowl, combine the oats, flour, brown sugar, and salt.
Step 5: Using your fingers or a pastry cutter, work the cold butter into the oat mixture until it resembles coarse crumbs.
Step 6: Sprinkle the crumble topping evenly over the peaches.
Step 7: Bake for 35-40 minutes, or until the fruit is bubbling and the topping is golden brown.
Step 8: Allow to cool for 15 minutes before serving to let the juices thicken.
Notes
Use firm-ripe peaches for the best texture. If using frozen peaches, thaw and drain them first.
