6 cups fresh peaches, peeled, pitted, and sliced (about 6-8 medium peaches)
1/2 cup granulated sugar (for peaches)
1/4 cup packed light brown sugar (for peaches)
2 tablespoons cornstarch
1 tablespoon fresh lemon juice
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 tablespoons unsalted butter, cut into small pieces (for peaches)
1 1/2 cups all-purpose flour
1/2 cup granulated sugar (for topping)
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup (1 stick) cold unsalted butter, cubed
1/2 cup milk (whole or 2%)
1 tablespoon granulated sugar (for sprinkling)

Instructions

Step 1: Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish or a 10-inch cast-iron skillet.
Step 2: In a large bowl, gently toss the sliced peaches with 1/2 cup granulated sugar, brown sugar, cornstarch, lemon juice, ground cinnamon, and ground nutmeg. Mix until the peaches are well coated.
Step 3: Pour the peach mixture into the prepared baking dish. Dot the top of the peaches with the 2 tablespoons of unsalted butter cut into small pieces.
Step 4: In a separate medium bowl, whisk together the all-purpose flour, 1/2 cup granulated sugar, baking powder, and salt.
Step 5: Cut in the cold, cubed unsalted butter using a pastry blender, two knives, or your fingertips until the mixture resembles coarse crumbs.
Step 6: Gradually add the milk, stirring just until the dry ingredients are moistened. Be careful not to overmix.
Step 7: Drop spoonfuls of the cobbler topping over the peach mixture. Sprinkle the topping with the remaining 1 tablespoon of granulated sugar.
Step 8: Bake for 35-45 minutes, or until the topping is golden brown and the peach filling is bubbling around the edges.
Step 9: Remove from the oven and let cool for at least 15-20 minutes before serving. This allows the filling to set up nicely.

Notes

For best results, use fresh, ripe peaches. If using frozen peaches, thaw and drain them well. This cobbler is delicious served warm with a scoop of vanilla ice cream or a dollop of whipped cream.
