Ingredients
1 large (16 oz) store-bought or homemade pound cake, cut into 1-inch cubes
2 lbs fresh strawberries, hulled and sliced
1 pint (12 oz) fresh blueberries
1 pint (6 oz) fresh raspberries
2-3 tbsp granulated sugar (adjust to taste and berry sweetness)
1 tsp lemon zest (optional, for brightness)
3 cups (1.5 pints) heavy whipping cream, very cold
1/2 cup powdered sugar
1 tsp vanilla extract
Instructions
Step 1: Prepare Your Berries. Gently wash all your fresh berries. Hull and slice the strawberries into bite-sized pieces. Leave the blueberries and raspberries whole. In a medium bowl, combine the sliced strawberries, blueberries, and raspberries. Add 1-2 tablespoons of granulated sugar and 1 teaspoon of lemon zest (optional, but highly recommended as it brightens the flavors). Gently toss and let them sit for at least 15-20 minutes. This allows the berries to release some of their juices, creating a delicious syrup that will soak into the cake.
Step 2: Prepare Your Cake. Slice your pound cake into 1-inch thick slices, then cut each slice into 1-inch cubes. If using a pre-made cake, ensure it's cooled completely.
Step 3: Prepare Your Cream. If using whipped topping, ensure it's thawed according to package directions. If making homemade whipped cream, combine 3 cups of cold heavy cream, 1/2 cup of powdered sugar, and 1 teaspoon of vanilla extract in a large chilled bowl. Beat with an electric mixer on medium-high speed until stiff peaks form. Be careful not to overbeat, or you'll end up with butter!
Step 4: Assemble the Trifle – First Layer. Choose a large, clear trifle bowl or a deep glass serving bowl to showcase the beautiful layers. Start by placing about one-third of the pound cake cubes evenly at the bottom of the bowl. Don't press them down too firmly; you want some air for soaking.
Step 5: Add Berry Layer. Spoon about one-third of your mixed berries, along with their delicious juices, over the cake layer. Spread them evenly.
Step 6: Add Cream Layer. Carefully dollop about one-third of your prepared whipped cream or topping over the berries. Gently spread it to cover the berries.
Step 7: Repeat Layers. Repeat the cake, berry, and cream layers two more times, ensuring the top layer is cream. For the final berry layer, arrange some of the most vibrant berries artistically on top of the cream for an appealing presentation.
Step 8: Chill & Serve. Cover the trifle loosely with plastic wrap. For best results and to allow the flavors to meld and the cake to soften, refrigerate for at least 4 hours, or preferably overnight. This chilling period is crucial for the trifle's texture and flavor, ensuring it’s perfectly ready for your Memorial Day celebration.
Notes
For best results, prepare the trifle the day before serving to allow the flavors to meld and the cake to fully absorb the berry juices. If you prefer a less sweet dessert, reduce the amount of sugar added to the berries and whipped cream. This trifle is also fantastic with a mix of fresh raspberries and blackberries in addition to strawberries and blueberries for more complex berry flavor. Always use very cold heavy cream for homemade whipped cream to ensure it whips up properly.
