Ingredients
1 pound rotini pasta (or other short pasta like farfalle, penne)
1 cup cherry tomatoes, halved
1 cucumber, diced
1 red bell pepper, diced
1/2 red onion, thinly sliced or finely diced
1/2 cup pitted black olives, halved
4 ounces feta cheese, crumbled
1/4 cup fresh parsley, chopped
For the Zesty Italian Dressing:
1/2 cup extra virgin olive oil
1/4 cup red wine vinegar
1 tablespoon Dijon mustard
2 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon salt, or to taste
1/4 teaspoon black pepper, or to taste
Instructions
Step 1: Cook the pasta according to package directions in a large pot of salted boiling water until al dente.
Step 2: Immediately drain the cooked pasta and rinse it thoroughly under cold running water. Drain very well to remove excess starch and cool the pasta.
Step 3: In a large mixing bowl, combine the cooled pasta with the halved cherry tomatoes, diced cucumber, diced red bell pepper, sliced red onion, halved black olives, crumbled feta cheese, and chopped fresh parsley.
Step 4: To prepare the dressing, in a small bowl or jar, whisk together the extra virgin olive oil, red wine vinegar, Dijon mustard, minced garlic, dried oregano, salt, and black pepper until well combined and emulsified.
Step 5: Pour the prepared dressing over the pasta and vegetable mixture in the large bowl.
Step 6: Toss everything gently but thoroughly until all ingredients are evenly coated with the dressing.
Step 7: Cover the bowl and refrigerate for at least 30 minutes, or preferably 2-4 hours, to allow the flavors to meld and deepen.
Step 8: Before serving, give the pasta salad another good toss. Serve chilled and enjoy!
Notes
For best results, prepare the pasta salad at least an hour in advance to allow the flavors to develop. If making ahead for more than a day, add fresh herbs just before serving. You can also add grilled chicken or chickpeas for extra protein.
