A quick, vibrant, and flavorful pasta dish featuring fresh lemon, garlic, and a medley of herbs, perfect for busy weeknights when you need delicious pasta recipes easy to whip up.

  • Total Time: 30 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

12 oz (340g) linguine or spaghetti
1/4 cup extra virgin olive oil
4-5 cloves garlic, minced
1/2 teaspoon red pepper flakes (optional, adjust to taste)
Juice of 1 large lemon (about 1/4 cup)
Zest of 1 large lemon
1/2 cup fresh parsley, chopped
1/4 cup fresh basil, chopped
1/4 - 1/2 cup reserved pasta water
Salt and freshly ground black pepper to taste
Parmesan cheese, for serving (optional)

Instructions

Step 1: Bring a large pot of heavily salted water to a rolling boil. Ensure the water is salty enough to season the pasta as it cooks.
Step 2: Add the linguine or spaghetti to the boiling water and cook according to package directions until al dente (firm to the bite, not mushy). This usually takes 8-10 minutes.
Step 3: While the pasta cooks, prepare your sauce base. In a large skillet or wide pan, heat the olive oil over medium-low heat.
Step 4: Add the minced garlic and red pepper flakes (if using) to the skillet. Sauté gently for 1-2 minutes, stirring constantly, until the garlic is fragrant and lightly golden. Do not let it brown, as burnt garlic can taste bitter.
Step 5: Before draining the pasta, reserve about 1 cup of the starchy pasta water. This water is crucial for creating a silky, emulsified sauce.
Step 6: Drain the cooked pasta thoroughly and immediately add it directly to the skillet with the garlic and oil mixture.
Step 7: Add the fresh lemon juice, lemon zest, chopped fresh parsley, and chopped fresh basil to the pasta in the skillet.
Step 8: Toss everything together vigorously, adding the reserved pasta water a little at a time (start with 1/4 cup and add more if needed) until the sauce coats the pasta beautifully. The goal is a light, glossy sauce that clings to the pasta, not a watery one. Continue to toss for 1-2 minutes, allowing the pasta to absorb the vibrant flavors.
Step 9: Season generously with salt and freshly ground black pepper to taste. Taste and adjust seasonings as needed; you might want a bit more lemon juice for brightness or a pinch more salt to enhance the flavors.
Step 10: Serve immediately, garnished with additional fresh herbs and an optional sprinkle of freshly grated Parmesan or Pecorino Romano cheese.

Notes

For the best flavor, always use fresh lemon juice and fresh herbs. The reserved pasta water is key for a creamy, emulsified sauce. Adjust red pepper flakes to your preferred level of spice. This dish is best served immediately.
