Ingredients
2 Ahi tuna steaks (1 to 1.5 inches thick, about 6 oz each), sushi-grade if possible
1 tablespoon olive oil (or avocado oil)
1 teaspoon coarse sea salt
½ teaspoon freshly ground black pepper
Optional: 1 tablespoon butter
Optional: 1 sprig fresh rosemary or thyme
Instructions
Step 1: Pat the tuna steaks thoroughly dry with paper towels. This is crucial for a good sear and forms the foundation of great tuna steak recipes.
Step 2: Season generously on all sides with sea salt and freshly ground black pepper.
Step 3: Heat a heavy-bottomed skillet (cast iron is ideal) over high heat until it just begins to smoke. Add the olive oil to the hot pan.
Step 4: Carefully place the seasoned tuna steaks into the skillet. You should hear a strong sizzling sound.
Step 5: Sear for 1.5 to 2 minutes per side for rare to medium-rare doneness. For a medium cook, sear for 2.5 to 3 minutes per side. If steaks are very thick, you can sear the thin edges for about 30 seconds each.
Step 6: (Optional) During the last minute of cooking, add butter and herbs to the pan, and baste the tuna steaks with the melted butter.
Step 7: Remove tuna from the pan and let rest on a cutting board for 2-3 minutes to allow juices to redistribute. This enhances all tuna steak recipes.
Step 8: Slice the tuna against the grain into ½-inch thick pieces and serve immediately with your favorite sides and sauces.
