Ingredients
1 tbsp olive oil (for greasing pan)
1 (13.5 oz / 400ml) can full-fat coconut milk
2-3 tbsp red curry paste (adjust to taste and spice preference)
2 tbsp soy sauce (or tamari for gluten-free)
1 tbsp brown sugar (or maple syrup)
1 tbsp grated fresh ginger
2 cloves garlic, minced
1/2 tsp salt (or to taste)
1 lb (approx. 450g) frozen dumplings or potstickers (pork, chicken, vegetable)
1 large bell pepper (any color), thinly sliced
1/2 medium onion, thinly sliced
Fresh cilantro, chopped (for garnish)
Sesame seeds (for garnish, optional)
Steamed jasmine rice or naan bread, for serving
Instructions
Step 1: Preheat your oven to 400°F (200°C). Lightly grease a 9x13 inch baking dish.
Step 2: In a large bowl, whisk together the coconut milk, red curry paste, soy sauce, brown sugar, grated ginger, minced garlic, and salt until smooth and well combined.
Step 3: Arrange the frozen dumplings in a single layer in the prepared baking dish.
Step 4: Pour the coconut curry sauce evenly over the dumplings, ensuring they are mostly submerged.
Step 5: Scatter the sliced bell pepper and onion over and around the dumplings.
Step 6: Cover the baking dish tightly with aluminum foil and bake for 20 minutes.
Step 7: Remove the foil, stir gently to coat all dumplings in the sauce, and continue baking uncovered for another 15-20 minutes, or until the sauce has thickened and the dumplings are tender and slightly golden at the edges.
Step 8: Garnish with fresh cilantro and sesame seeds, if using. Serve hot with steamed rice or naan bread.
Notes
Feel free to adjust the spice level of the red curry paste to your preference. For extra creaminess, a splash of heavy cream or a spoonful of peanut butter can be added to the sauce. This dish reheats well and is great for meal prep!
