Ingredients
1.5 lbs ground beef (80/20 or 85/15 lean)
2 tablespoons olive oil
1 large onion, chopped
2 cloves garlic, minced
1.5 lbs Yukon Gold or red potatoes, scrubbed and diced into 1/2-inch cubes
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon paprika
1/2 teaspoon dried oregano
1/4 teaspoon garlic powder
1/4 cup beef broth or water
2 cups shredded sharp cheddar cheese
Instructions
Step 1: Preheat your oven to 400°F (200°C).
Step 2: Heat olive oil in a large oven-safe skillet (cast iron or heavy-bottomed) over medium-high heat. Add the chopped onion and cook until softened, about 3-5 minutes.
Step 3: Add the ground beef to the skillet with the onion. Break up the meat with a spoon and cook until browned, about 5-7 minutes. Drain any excess fat.
Step 4: Stir in the minced garlic, salt, pepper, paprika, oregano, and garlic powder. Cook for 1 minute until fragrant.
Step 5: Add the diced potatoes and beef broth (or water) to the skillet. Stir everything together to combine. Bring to a simmer, then reduce heat to medium-low, cover the skillet, and cook for 10-12 minutes, or until potatoes are slightly tender but still firm. Stir occasionally to prevent sticking.
Step 6: Remove the lid. If there's still a lot of liquid, increase heat slightly and cook for a few more minutes until most of the liquid has evaporated. Spread the mixture evenly in the skillet.
Step 7: Sprinkle the shredded cheddar cheese evenly over the top of the potato and meat mixture.
Step 8: Transfer the skillet to the preheated oven. Bake for 15-20 minutes, or until the cheese is melted, bubbly, and lightly golden brown. For an extra crispy top, you can broil for the last 1-2 minutes, watching carefully to prevent burning.
