1 tsp ground cinnamon
1 tsp baking powder
1/2 tsp salt
2 medium apples, peeled, cored, and diced (about 3 cups)
2 large eggs
2 cups milk (dairy or non-dairy)
1 tsp vanilla extract
2 tbsp unsalted butter, melted (optional, for richness)

Instructions

Step 1: Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
Step 2: In a large mixing bowl, combine the rolled oats, brown sugar, cinnamon, baking powder, and salt. Whisk to combine well.
Step 3: Add the diced apples to the dry ingredients and toss gently to coat.
Step 4: In a separate medium bowl, whisk together the milk, eggs, vanilla extract, and melted butter (if using).
Step 5: Pour the wet ingredients over the oat and apple mixture. Stir gently until just combined.
Step 6: Pour the entire mixture into your prepared baking dish, spreading it evenly.
