4-6 fresh mint leaves, plus a large sprig for garnish
1/4 ounce simple syrup (1:1 sugar to water)
2 ounces good quality Kentucky straight bourbon whiskey

Instructions

Step 1: Place 4-6 fresh mint leaves and 1/4 ounce of simple syrup into the bottom of a chilled julep cup or sturdy rock glass.
Step 2: Gently muddle the mint leaves with the simple syrup. Press and twist a few times, just enough to release the fragrant oils from the mint. Avoid over-muddling, which can release bitter chlorophyll.
Step 3: Add 2 ounces of bourbon to the cup. Stir briefly to combine the mint, syrup, and bourbon.
Step 4: Fill the cup nearly to the brim with crushed ice.
Step 5: Stir the mixture vigorously with a bar spoon for about 30 seconds. This chills the drink thoroughly and helps frost the outside of the cup. Add more crushed ice as needed to keep the cup full and frosty.
Step 6: Garnish generously with a large, fresh sprig of mint. Gently slap the mint sprig against your hand before placing it into the ice to release its aroma.
