Instructions

Step 1: Ensure your cream cheese is softened to room temperature for easier mixing.
Step 2: Grate both the extra-sharp cheddar and mild cheddar cheeses from blocks. Avoid pre-shredded cheese for the best texture.
Step 3: Thoroughly drain the diced pimentos. You can press them in a fine-mesh sieve or pat them dry with paper towels to remove as much liquid as possible.
Step 4: In a large mixing bowl, combine the freshly grated sharp cheddar and mild cheddar cheeses.
Step 5: Add the well-drained pimentos to the cheese mixture.
