1 (4 oz) jar diced pimentos, thoroughly drained
4 oz (113g) cream cheese, softened
1/2 cup (120ml) Duke's mayonnaise (or other high-quality, full-fat mayonnaise)
1/2 tsp onion powder
1/4 tsp garlic powder
1/2 tsp Worcestershire sauce
1/8 tsp cayenne pepper (or more, to taste)
1/4 tsp freshly ground black pepper
Instructions
Step 1: Ensure your cream cheese is softened to room temperature for easier mixing.
Step 2: Grate both the extra-sharp cheddar and mild cheddar cheeses from blocks. Avoid pre-shredded cheese for the best texture.
Step 3: Thoroughly drain the diced pimentos. You can press them in a fine-mesh sieve or pat them dry with paper towels to remove as much liquid as possible.
Step 4: In a large mixing bowl, combine the freshly grated sharp cheddar and mild cheddar cheeses.
Step 5: Add the well-drained pimentos to the cheese mixture.
Step 6: Add the softened cream cheese to the bowl.
Step 7: Spoon in the Duke's mayonnaise.
Step 8: Season the mixture with onion powder, garlic powder, Worcestershire sauce, cayenne pepper, and freshly ground black pepper.
Step 9: Using a sturdy spatula or spoon, mix all ingredients until well combined and creamy. Be careful not to overmix; some texture from the grated cheese is desirable.
Step 10: Taste and adjust seasonings as necessary. You may want to add more pepper, Worcestershire, or cayenne to suit your preference.
Step 11: Transfer the pimento cheese to an airtight container.
Step 12: Refrigerate for at least 2-4 hours, or preferably overnight, to allow the flavors to meld and deepen. Serve chilled or at room temperature.
Notes
For the most authentic flavor, use freshly grated cheddar cheeses and Duke's mayonnaise. Chilling time is essential for the flavors to fully develop. This recipe is best made ahead of time.
