2 lbs chicken wings, separated into flats and drumettes
1 ripe mango, peeled and chopped
2 fresh limes, juiced and zested
4 cloves garlic, minced
1 inch fresh ginger, grated
1 tbsp olive oil
1 tsp chili powder
1/2 tsp ground cumin
1 tsp salt
1/2 tsp black pepper
Fresh cilantro, chopped (for garnish)

Instructions

Step 1: Prepare the Chicken Wings. Start by patting your chicken wings thoroughly dry with paper towels. This is a critical step for achieving maximum crispiness. Separate whole wings into flats and drumettes if they aren't already. Place the dried wings into a large bowl.
Step 2: Make the Mango & Lime Marinade. In a blender or food processor, combine the chopped ripe mango, fresh lime juice, lime zest, minced garlic, grated fresh ginger, olive oil, chili powder, cumin, salt, and black pepper. Blend until the mixture is smooth and well combined. Taste and adjust seasoning if necessary.
Step 3: Marinate the Wings. Pour the mango-lime marinade over the chicken wings in the bowl. Toss everything together until all the wings are evenly coated. Cover and refrigerate for at least 30 minutes, or ideally 2-4 hours, for the best flavor.
Step 4: Preheat the Air Fryer. About 10 minutes before you're ready to cook, preheat your air fryer to 375°F (190°C).
Step 5: Arrange Wings in Air Fryer. Remove the marinated chicken wings from the refrigerator and let them sit at room temperature for about 10-15 minutes. Arrange the wings in a single layer in the air fryer basket, ensuring not to overcrowd it. Cook in batches if necessary.
Step 6: Air Fry the Wings. Air fry for 10 minutes, then flip the wings using tongs. Continue to air fry for another 8-10 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden brown and crispy. For extra crispiness, increase the temperature to 400°F (200°C) for the last 2-3 minutes.
Step 7: Rest and Serve. Once cooked, remove the wings from the air fryer and let them rest for a few minutes before serving. Garnish with fresh chopped cilantro and an extra squeeze of lime juice.

Notes

For best results, always pat your chicken wings very dry before marinating. Don't overcrowd the air fryer basket to ensure maximum crispiness. Adjust chili powder to your preferred spice level. These wings are fantastic served with a side of coconut rice or a fresh green salad.
