Ingredients
2 tbsp olive oil or coconut oil
1 large onion, finely chopped
3 cloves garlic, minced
1 inch fresh ginger, grated
1-2 green chilies, deseeded and minced (optional)
1 tsp ground turmeric
1 tsp ground cumin
1 tsp ground coriander
1 red bell pepper, diced
1 red bell pepper, thinly sliced
1 (13.5 oz / 400ml) can full-fat coconut milk
1/2 cup water or fish broth
1.5 lbs firm white fish fillets (e.g., cod, snapper, halibut), cut into 1.5-2 inch pieces
Salt and black pepper to taste
Juice of 1/2 lime
Fresh cilantro, chopped, for garnish
Instructions
Step 1: Heat oil in a large pot or Dutch oven over medium heat. Add the chopped onion and sauté until softened and translucent, about 5-7 minutes.
Step 2: Add minced garlic, grated ginger, and minced green chilies (if using) to the pot. Cook for 1 minute until fragrant. Be careful not to burn the garlic.
Step 3: Stir in the ground turmeric, cumin, and coriander. Cook for another 30 seconds to 1 minute, stirring constantly, until the spices are aromatic.
Step 4: Add the diced red bell pepper and thinly sliced red bell pepper. Cook for 3-5 minutes until they begin to soften.
Step 5: Pour in the full-fat coconut milk and water (or fish broth). Stir well to combine, scraping up any browned bits from the bottom of the pot. Bring to a gentle simmer.
Step 6: Reduce heat to low, cover, and let the sauce simmer for 10-15 minutes, allowing the flavors to meld and deepen.
Step 7: Gently add the fish pieces to the simmering sauce. Season with salt and black pepper. Cover and cook for 5-8 minutes, or until the fish is opaque and flakes easily with a fork. Be careful not to overcook the fish.
Step 8: Remove from heat. Stir in the fresh lime juice. Taste and adjust seasoning as needed.
Step 9: Garnish generously with fresh chopped cilantro before serving. Serve hot with basmati rice, couscous, or flatbread.
Notes
For an extra layer of flavor, marinate the fish in a pinch of salt and turmeric for 15 minutes before adding it to the curry. If you prefer a thicker sauce, you can let it simmer uncovered for a few extra minutes at the end. Adjust green chilies according to your spice preference.
