1 (10 oz) package frozen chopped spinach, thawed and squeezed dry
1 (1.4 oz) package Knorr Vegetable Soup Mix (or Knorr Vegetable Recipe Mix)
16 oz sour cream (full-fat recommended)
1 cup mayonnaise (full-fat recommended)
1 (8 oz) can water chestnuts, drained and finely chopped
3-4 green onions, thinly sliced (white and light green parts)
Instructions
Step 1: Thaw the frozen chopped spinach completely. This can be done overnight in the refrigerator or quickly in the microwave. Once thawed, transfer the spinach to a clean kitchen towel or several layers of paper towels. Squeeze out as much excess water as possible. This step is crucial for a thick, creamy dip.
Step 2: In a large mixing bowl, combine the Knorr Vegetable Soup Mix, sour cream, and mayonnaise. Stir well until all ingredients are thoroughly blended and smooth. Ensure there are no dry pockets of soup mix remaining.
Step 3: Add the thoroughly squeezed spinach, finely chopped water chestnuts, and sliced green onions to the bowl with the creamy mixture.
Step 4: Gently fold all the ingredients together until everything is evenly distributed throughout the dip. Make sure the spinach, water chestnuts, and green onions are well incorporated.
Step 5: Cover the bowl tightly with plastic wrap and refrigerate for at least 4 hours. For the best flavor development, it is highly recommended to chill the dip overnight. This allows the flavors to meld and deepen, and the soup mix to fully rehydrate.
Step 6: Before serving, give the Knorr spinach dip a good stir. Transfer to a serving bowl and arrange with your favorite dippers such as pumpernickel bread, pita chips, crackers, carrot sticks, celery, and bell pepper strips. Enjoy!
