1/4 cup pumpkin puree (100% pure, not pie filling)
1/4 cup water
2 tablespoons maple syrup (or preferred sweetener)
1 teaspoon pumpkin pie spice, plus more for garnish
1 cup strong brewed chai tea, cooled (from 2-3 tea bags or concentrate)
1/2 cup milk of choice (dairy, oat, almond, or soy work great)
Ice cubes
Optional: whipped cream, cinnamon stick for garnish

Instructions

Step 1: Prepare the Pumpkin Spice Syrup. In a small saucepan, combine the pumpkin puree, water, maple syrup, and 1 teaspoon of pumpkin pie spice. Heat over medium-low heat, stirring constantly until warm, fragrant, and the syrup has dissolved, about 3-5 minutes. Do not boil. Remove from heat and set aside to cool slightly. This can be made ahead and stored in the fridge.
Step 2: Brew the Chai Tea. If using tea bags, steep 2-3 chai tea bags in 1 cup of hot water for 5-7 minutes to create a strong brew. Remove tea bags and let the chai cool completely. If using concentrate, prepare 1 cup of strong chai according to package directions and cool.
Step 3: Assemble the Latte. In a tall glass, add 1-2 tablespoons of the cooled pumpkin spice syrup (adjust to your sweetness preference).
Step 4: Add Ice and Chai. Fill the glass generously with ice cubes. Pour the cooled, strong chai tea over the ice until the glass is about two-thirds full.
Step 5: Add Milk and Stir. Top the remaining space in the glass with your preferred milk. Stir gently with a spoon or a straw to combine all the layers.
