12-15 vanilla ice cream sandwiches, unwrapped
1 (8 ounce) container frozen whipped topping, thawed
1/2 cup chocolate syrup
1/4 cup caramel sauce
Optional: sprinkles, chopped nuts, mini chocolate chips, or other candies for topping
Instructions
Step 1: Line a 9x13 inch baking dish with parchment paper or foil, leaving an overhang on the sides. This will make it easier to lift the cake out later.
Step 2: Arrange a single layer of ice cream sandwiches in the bottom of the prepared dish, cutting them as needed to fit snugly and cover the entire bottom. You'll likely use about 6-8 sandwiches for the first layer.
Step 3: Spread half of the thawed whipped topping evenly over the layer of ice cream sandwiches. Use an offset spatula or the back of a spoon to create a smooth surface.
Step 4: Drizzle about half of the chocolate syrup and half of the caramel sauce over the whipped topping. You can use a zig-zag pattern for an attractive finish.
Step 5: Create a second layer of ice cream sandwiches on top of the whipped topping and sauces, again cutting to fit as necessary. Ensure the entire surface is covered.
Step 6: Spread the remaining half of the whipped topping over the second layer of ice cream sandwiches.
Step 7: Drizzle with the remaining chocolate syrup and caramel sauce. At this point, you can add any optional toppings like sprinkles, chopped nuts, or mini chocolate chips.
Step 8: Cover the dish tightly with plastic wrap or foil. Place the ice cream sandwich cake in the freezer for at least 4 hours, or preferably overnight, until thoroughly frozen and firm.
Step 9: Once frozen, use the parchment paper/foil overhang to lift the entire cake out of the dish. Place it on a cutting board.
