Ingredients
2 cups heavy whipping cream, cold
1/2 cup powdered sugar
2 teaspoons pure vanilla extract
1 package (9 oz) thin chocolate wafer cookies
Optional: Chocolate shavings for garnish
Instructions
Step 1: In a large chilled bowl, combine the cold heavy whipping cream, powdered sugar, and vanilla extract.
Step 2: Using a hand mixer or stand mixer, beat the mixture on medium-high speed until stiff peaks form.
Step 3: On a serving platter, spread a thin layer of whipped cream to secure the first layer of cookies.
Step 4: Arrange a layer of chocolate wafers on the cream. Spread about 1/2 cup of whipped cream evenly over the cookies.
Step 5: Repeat the layering process (cookies, then cream) until all cookies are used, ending with a layer of cream on top and sides.
Step 6: Cover loosely with plastic wrap and refrigerate for at least 6 hours, ideally 24 hours, to allow the cookies to soften.
Step 7: Before serving, garnish with chocolate shavings or additional cookie crumbles. Slice and enjoy cold.
Notes
For best results, use a metal bowl that has been chilled in the freezer for 10 minutes before whipping the cream.
