Ingredients

Scale

8 cups (2 liters) chicken or beef broth (low sodium preferred)
6 slices fresh ginger
4-5 cloves garlic, smashed
2-3 star anise pods
1/4 cup dried goji berries (optional)
2-3 dried shiitake mushrooms (optional, for umami)
Salt to taste
1 lb (450g) thinly sliced beef (e.g., rib-eye, sirloin, short rib)
1/2 lb (225g) thinly sliced lamb or pork (optional)
1 lb (450g) mixed fresh vegetables (e.g., napa cabbage, bok choy, spinach, enoki mushrooms, shiitake mushrooms, oyster mushrooms, corn on the cob, lotus root, daikon radish, carrots)
1/2 lb (225g) firm tofu, cubed or sliced
8 oz (225g) vermicelli, glass noodles, or udon noodles
Assorted fish balls, beef balls, or wontons (optional)
For dipping sauces (suggested components):
Soy sauce
Sesame paste or tahini
Chili oil or fresh chilies
Minced garlic
Chopped cilantro
Sliced green onions
Rice vinegar
A pinch of sugar

Instructions

Step 1: Prepare Your Broth. In a large pot (or directly in your hot pot vessel), combine the chicken or beef broth, sliced ginger, smashed garlic, star anise pods, goji berries (if using), and dried shiitake mushrooms (if using). Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for at least 30 minutes, or up to 1 hour, to allow the flavors to deepen. Taste and adjust seasoning with salt as needed. Strain the broth if you prefer it clear, or leave the aromatics in.
Step 2: Prepare Ingredients. While the broth simmers, prepare all your hot pot ingredients. Arrange the thinly sliced beef, lamb/pork, and any other proteins neatly on separate platters. Wash and chop all vegetables into bite-sized pieces suitable for quick cooking. Cube the tofu. Arrange all ingredients aesthetically on serving platters.
Step 3: Set Up Dipping Sauce Station. Provide small individual bowls for each diner, along with the various dipping sauce components. Encourage guests to mix their own personalized sauces according to their taste preferences.
Step 4: Set Up Hot Pot Station. Place your electric hot pot, induction burner with a pot, or any suitable cooking vessel in the center of your dining table. Pour the prepared hot broth into the pot. Turn on the heat to bring the broth to a gentle simmer.
Step 5: Begin Cooking and Eating. Once the broth is simmering gently, diners can begin to add ingredients to the hot pot using chopsticks or tongs. Start with ingredients that require a bit longer to cook, like root vegetables or harder mushrooms. Add thinly sliced meats, leafy greens, and noodles towards the end, as they cook very quickly.
Step 6: Dip and Enjoy. Once cooked, remove the ingredients from the hot pot, dip them into your personalized sauce, and enjoy immediately. Remember to pace yourself and enjoy the communal aspect of the meal. Replenish the broth as needed throughout the meal with hot water or additional broth.
Step 7: Finish with Noodles. Towards the end of the meal, when the broth has absorbed all the delicious flavors from the cooked ingredients, add your noodles to the pot. Cook until tender, then enjoy the rich, flavorful noodle soup as a satisfying conclusion to your hot pot experience.

Notes

For the best flavor, make your broth a few hours in advance or even the day before to allow the flavors to fully meld. When slicing meat at home, partially freezing it for about 30 minutes will make it much easier to get those paper-thin slices. Always keep extra hot broth or water on hand to replenish the pot as needed. Encourage guests to mix their own dipping sauces for a personalized touch to their hot pot recipe journey!
