2 large sweet potatoes (about 2 lbs), peeled and cut into 1.5-inch chunks
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon smoked paprika
1 cup vegetable or chicken broth
2 tablespoons unsalted butter, cut into small pieces
3-4 tablespoons hot honey (store-bought or homemade)
Fresh parsley or cilantro, chopped (for garnish, optional)
Instructions
Step 1: Preheat your oven to 400°F (200°C). Peel the sweet potatoes and cut them into roughly 1.5 to 2-inch chunks. Try to make them as uniform as possible for even cooking.
Step 2: In a large bowl, toss the sweet potato chunks with olive oil, salt, black pepper, garlic powder, and smoked paprika until well coated.
Step 3: Spread the seasoned sweet potatoes in a single layer on a large baking sheet. Roast for 15-20 minutes, or until they just begin to soften and develop a slight char on the edges.
Step 4: Carefully remove the baking sheet from the oven. Pour the vegetable or chicken broth over the sweet potatoes. Add the butter, distributing it evenly among the potatoes.
Step 5: Return the baking sheet to the oven and continue to roast for another 20-25 minutes, or until the sweet potatoes are fork-tender and most of the liquid has been absorbed or evaporated, leaving a luscious, buttery glaze.
Step 6: Drizzle generously with hot honey immediately after removing from the oven. Gently toss to coat. Garnish with fresh parsley or cilantro, if desired, and serve immediately.
Notes
For an extra layer of flavor, consider adding a pinch of chili flakes to your hot honey or using a dash of apple cider vinegar with the broth for a tangy note. These potatoes are best served warm.
