1 (8-10 lb) bone-in spiral-sliced ham
1 cup clover honey
1/2 cup dark brown sugar, packed
1/4 cup unsalted butter
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground cloves
Optional: 1/2 cup granulated sugar for the crackling crust

Instructions

Step 1: Remove the ham from the refrigerator at least 2 hours before cooking to allow it to reach room temperature for even heating.
Step 2: Pre-heat your oven to 325°F (165°C). Place the ham cut-side down in a heavy roasting pan.
Step 3: Wrap the ham tightly with heavy-duty aluminum foil to ensure no moisture escapes during the baking process.
Step 4: Bake the ham for approximately 12-15 minutes per pound, or until the internal temperature reaches 130°F (54°C).
Step 5: While the ham is in the oven, combine honey, brown sugar, butter, cinnamon, nutmeg, and cloves in a small saucepan over medium heat.
Step 6: Simmer the glaze for 2-3 minutes until the sugar is dissolved and the mixture is slightly thickened.
Step 7: Once the ham reaches temperature, remove it from the oven and increase the oven temperature to 425°F (218°C).
Step 8: Carefully unwrap the ham and brush half of the honey glaze generously over the surface and between the slices.
Step 9: Return the ham to the oven for 10 minutes. Remove again, apply the remaining glaze, and sprinkle with granulated sugar if a thicker crust is desired.
Step 10: Broil for 3-5 minutes or use a kitchen torch to caramelize the sugar until it is bubbly and dark mahogany. Let the ham rest for 20 minutes before serving.

Notes

Always use a meat thermometer to ensure the ham is warmed through without becoming dry. The sugar crust can burn quickly under the broiler, so watch it closely!
