Ingredients
1 cup fresh breadcrumbs (or panko)
1/2 cup milk (whole or 2%)
2 lbs ground beef (80/20 chuck recommended)
1 large egg, lightly beaten
1/2 cup finely diced yellow onion
2 cloves garlic, minced
1 tablespoon Worcestershire sauce
2 tablespoons ketchup (for the meat mixture)
1 teaspoon dried parsley
1/2 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon black pepper
For the Glaze:
1/2 cup ketchup
2 tablespoons light brown sugar
1 tablespoon apple cider vinegar
Instructions
Step 1: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or foil for easier cleanup.
Step 2: In a small bowl, combine the breadcrumbs and milk. Let it sit for 5-10 minutes to allow the breadcrumbs to absorb the milk.
Step 3: In a large bowl, combine the ground beef, soaked breadcrumbs, egg, finely diced onion, minced garlic, Worcestershire sauce, 2 tablespoons ketchup, dried parsley, dried thyme, salt, and black pepper.
Step 4: Using your hands, gently mix the ingredients until just combined. Be careful not to overmix.
Step 5: Transfer the meat mixture to the prepared baking sheet. Form it into a loaf shape, about 9x5 inches.
Step 6: In a small bowl, whisk together the 1/2 cup ketchup, brown sugar, and apple cider vinegar for the glaze. Spread half of this glaze evenly over the top and sides of the meatloaf.
Step 7: Bake for 45 minutes. Remove from the oven, spread the remaining glaze over the meatloaf, and return to the oven. Continue baking for another 15-25 minutes, or until the internal temperature reaches 160°F (71°C).
Step 8: Once baked, remove the meatloaf from the oven and let it rest for 10-15 minutes before slicing.
Step 9: Slice and serve hot with your favorite side dishes!
Notes
For best results, avoid overmixing the meat as it can make the meatloaf tough. Letting the meatloaf rest after baking is crucial for juicy, tender slices. Leftovers are fantastic for sandwiches or re-heated meals!
