3/4 cup extra virgin olive oil
1/2 cup red wine vinegar
2 cloves garlic, minced (about 1 tablespoon)
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon dried thyme
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional, for a kick)
1 teaspoon Dijon mustard (optional, for better emulsification)
Instructions
Step 1: Mince the fresh garlic cloves very finely.
Step 2: In a medium bowl or a glass jar with a tight-fitting lid, combine the minced garlic, red wine vinegar, dried oregano, dried basil, dried thyme, onion powder, salt, black pepper, and red pepper flakes (if using). Add Dijon mustard if using. Whisk or shake thoroughly until the salt dissolves and the spices are well incorporated.
Step 3: Slowly drizzle in the extra virgin olive oil while continuously whisking or shaking vigorously. Continue until the dressing is well combined and slightly thickened (emulsified).
Step 4: Taste the dressing and adjust seasonings as needed. Add more salt, pepper, or vinegar to suit your preference. A tiny pinch of sugar or honey can be added if you prefer a slightly sweeter dressing.
Step 5: Cover the dressing and refrigerate for at least 30 minutes to allow the flavors to meld and deepen. Give it a good shake or whisk before serving, as some separation is natural. Store in an airtight container in the refrigerator for up to 1 week.

For best flavor, make this dressing at least 30 minutes ahead of time to allow the flavors to meld. If the olive oil solidifies in the fridge, let it sit at room temperature for 15-20 minutes and shake vigorously before serving.
