Ingredients
2 cups all-purpose flour
1/2 cup granulated sugar
2 tsp baking powder
1 tsp baking soda
1 1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp salt
1 1/2 cups buttermilk
1/2 cup (1 stick) unsalted butter, melted and cooled slightly
1 large egg
1 tsp vanilla extract
2 medium apples (e.g., Granny Smith, Honeycrisp), peeled, cored, and finely diced (about 1.5 cups)
For the Glaze:
1 1/2 cups powdered sugar
3-4 tbsp milk or cream
1/2 tsp vanilla extract
Instructions
Step 1: Peel, core, and finely dice the apples into ¼-inch pieces. Set aside.
Step 2: In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined.
Step 3: In a separate medium bowl, whisk together the buttermilk, melted butter, egg, and vanilla extract.
Step 4: Pour the wet ingredients into the dry ingredients. Stir gently with a spoon or spatula until just combined. Do not overmix; a few lumps are normal.
Step 5: Gently fold in the diced apples until evenly distributed throughout the batter.
Step 6: Preheat your waffle iron according to the manufacturer's instructions and lightly grease the plates with cooking spray or a brush of oil.
Step 7: Scoop about ½ cup of batter (or the recommended amount for your waffle maker) onto the hot iron. Close the lid and cook for 4-6 minutes, or until golden brown and steaming subsides.
Step 8: While the waffles are cooking, prepare the glaze by whisking together the powdered sugar, milk (or cream), and vanilla extract in a small bowl until smooth. Adjust consistency as needed.
Step 9: Carefully remove the cooked waffle donuts from the iron and place them on a wire rack set over a baking sheet. Immediately drizzle generously with the prepared glaze.
Step 10: Serve warm and enjoy your delightful Homemade Apple Fritter Waffle Donuts!
Notes
For best results, do not overmix the batter. A few lumps are fine. Cook immediately after mixing for the best texture. Leftovers can be reheated gently in a toaster oven or air fryer to regain crispness.
