Ingredients
1 sheet frozen puff pastry, thawed
1.5 lbs mixed heirloom tomatoes, sliced
4 oz goat cheese, softened
2 tbsp ricotta cheese
1 tbsp fresh thyme, minced
1 tsp lemon zest
1/2 tsp sea salt
1/4 tsp black pepper
1 tbsp extra virgin olive oil
Fresh basil leaves for garnish
Instructions
Step 1: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
Step 2: Slice the heirloom tomatoes into 1/4-inch rounds and place them on a double layer of paper towels. Sprinkle with salt and let sit for 15 minutes to draw out moisture.
Step 3: In a small bowl, mix together the goat cheese, ricotta, thyme, and lemon zest until smooth.
Step 4: Roll out the puff pastry on the prepared baking sheet. Lightly score a 1-inch border around the edge with a knife.
Step 5: Spread the cheese mixture evenly within the scored border of the pastry.
Step 6: Pat the tomatoes dry with another paper towel and arrange them over the cheese layer in an overlapping pattern.
Step 7: Drizzle the tomatoes with olive oil and season with black pepper.
Step 8: Bake for 20-25 minutes until the pastry is puffed and golden brown. Let cool for 10 minutes, garnish with fresh basil, and serve.
Notes
Always salt your tomatoes and let them drain; this prevents the puff pastry from becoming soggy. You can use store-bought or homemade puff pastry.
