  • Total Time: 2 hours 50 minutes
  • Yield: 8 servings 1x

Ingredients

Scale

2 tbsp olive oil
2 lbs ground beef (80/20 or 85/15)
1 large yellow onion, chopped
1 large green bell pepper, chopped
4 cloves garlic, minced
2 (14.5 ounce) cans diced tomatoes, undrained
1 (28 ounce) can crushed tomatoes
1 (15 ounce) can tomato sauce
2 (15 ounce) cans kidney beans, drained and rinsed
1 (15 ounce) can black beans, drained and rinsed
1/4 cup chili powder
2 tbsp ground cumin
1 tbsp smoked paprika
1 tsp dried oregano
1/2 tsp cayenne pepper (optional, for extra heat)
1 tsp salt, or to taste
1/2 tsp black pepper, or to taste
1 cup beef broth
1 tbsp unsweetened cocoa powder (optional, for depth)
Toppings: shredded cheddar cheese, sour cream, chopped green onions, fresh cilantro, cornbread, Fritos.

Instructions

Step 1: Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
Step 2: Add chopped onion and green bell pepper to the pot. Sauté until softened, about 5-7 minutes. Stir in minced garlic and cook for another minute until fragrant.
Step 3: Stir in chili powder, ground cumin, smoked paprika, dried oregano, cayenne pepper (if using), salt, and black pepper. Cook for 1-2 minutes, stirring constantly, to toast the spices. This enhances their flavor, crucial for great chili recipes.
Step 4: Pour in diced tomatoes (undrained), crushed tomatoes, tomato sauce, and beef broth. Stir well to combine.
Step 5: Add drained and rinsed kidney beans and black beans. Bring the mixture to a simmer, then reduce heat to low, cover, and let it cook for at least 2 hours, stirring occasionally. The longer it simmers, the more the flavors meld, making this one of the best chili recipes.
Step 6: If using, stir in the unsweetened cocoa powder during the last 30 minutes of cooking. This secret ingredient deepens the color and adds a rich complexity to the chili.
Step 7: Taste and adjust seasonings as needed. If the chili is too thick, add a little more beef broth. If too thin, remove the lid for the last 30 minutes of cooking to allow some liquid to evaporate.
Step 8: Serve hot with your favorite toppings like shredded cheddar cheese, a dollop of sour cream, chopped green onions, or fresh cilantro. This hearty dish pairs wonderfully with cornbread or Fritos for an ultimate comfort meal. Enjoy your delicious homemade chili recipes!

Notes

For best flavor, make this chili a day ahead and let it sit in the refrigerator overnight. Reheat gently. You can also freeze portions for quick meals later. Store cooled chili in an airtight container for up to 3-4 days in the refrigerator or up to 3 months in the freezer.
