2 lbs yellow squash, firm and bright, trimmed and sliced 1/4-inch thick
2 tablespoons extra virgin olive oil
3 cloves garlic, minced
1/2 teaspoon sea salt, or to taste
1/4 teaspoon black pepper, or to taste
2 tablespoons fresh dill or parsley, chopped (or a mix)
Instructions
Step 1: Wash the yellow squash thoroughly. Trim off both ends and slice into uniform 1/4 to 1/2-inch thick rounds or half-moons.
Step 2: Peel and finely mince the garlic cloves. Set aside.
Step 3: Heat the olive oil in a large skillet or frying pan over medium heat until it shimmers.
Step 4: Add the minced garlic to the hot oil and sauté for about 30 seconds until fragrant, being careful not to burn it.
Step 5: Immediately add the sliced yellow squash to the pan. Season with sea salt and black pepper.
Step 6: Sauté the squash, stirring occasionally, for 7-10 minutes, or until it's tender-crisp with slight golden edges. Avoid overcooking to prevent mushiness.
Step 7: Remove the pan from the heat. Stir in the fresh chopped dill or parsley. Taste and adjust seasoning as needed. Serve warm.
Notes
For an extra boost of flavor, a squeeze of fresh lemon juice at the end can brighten the dish. Feel free to experiment with other herbs like basil or chives. Don't overcrowd the pan; cook in batches if necessary to ensure even browning and tender-crisp texture.
