5 cups fresh rhubarb, diced into 1-inch pieces (about 1.5 lbs)
2 tbsp maple syrup or honey (plus more for topping, if desired)
1 tbsp cornstarch
1 tsp vanilla extract
1 cup old-fashioned rolled oats
1/2 cup whole wheat flour
1/4 cup light brown sugar, packed (or 2 more tbsp maple syrup/honey)
1 tsp ground cinnamon
Pinch of salt
1/4 cup melted coconut oil or unsalted butter

Instructions

Step 1: Preheat your oven to 375°F (190°C). Lightly grease an 8x8 inch baking dish or 4 individual ramekins.
Step 2: Prepare the Rhubarb Filling. In a medium bowl, combine the diced rhubarb, 2 tablespoons of maple syrup (or honey), 1 tablespoon of cornstarch, and 1 teaspoon of vanilla extract. Toss gently until the rhubarb is evenly coated.
Step 3: Spread the rhubarb mixture evenly into your prepared baking dish.
Step 4: Make the Oat Crumble Topping. In a separate bowl, combine the rolled oats, whole wheat flour, brown sugar (or remaining maple syrup/honey), cinnamon, and a pinch of salt. Mix well.
Step 5: Add the melted coconut oil (or unsalted butter). Use your fingers or a fork to mix until the mixture resembles coarse crumbs and is well combined.
Step 6: Sprinkle the oat crumble topping evenly over the rhubarb filling in the baking dish. Do not press down too firmly.
Step 7: Bake for 30-35 minutes, or until the topping is golden brown and the rhubarb is tender and bubbling. If the topping starts to brown too quickly, loosely cover it with foil.
Step 8: Remove from the oven and let it cool for at least 10-15 minutes before serving. Enjoy warm!

Notes

For best results, use fresh, firm rhubarb stalks. If using frozen rhubarb, do not thaw completely before adding to the filling to prevent excess moisture. This crumble can be made ahead of time and reheated gently.
