Ingredients
2 tbsp olive oil
1 large yellow onion, chopped
4 cloves garlic, minced
2 inches fresh ginger, peeled and grated (about 2 tbsp)
1 inch fresh turmeric, peeled and grated (about 1 tbsp)
6 bone-in, skin-on chicken thighs (about 2 lbs)
8 cups chicken broth (low sodium)
2 carrots, peeled and sliced
2 celery stalks, sliced
1 cup chopped shiitake mushrooms (optional, for extra umami)
1 tsp dried thyme
1/2 tsp black pepper
Salt to taste
Fresh cilantro or green onions, for garnish
Lime wedges, for serving
Instructions
Step 1: Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and sauté until softened, about 5-7 minutes. This is the first step to building the rich flavor of your Healing Ginger Turmeric Chicken Soup.
Step 2: Add the minced garlic, grated ginger, and grated turmeric to the pot. Cook for another 2-3 minutes, stirring constantly, until fragrant. Be mindful not to burn the garlic.
Step 3: Season the chicken thighs lightly with salt and pepper. Add them to the pot, skin-side down, and sear for 5-7 minutes until the skin is golden brown. Flip and sear the other side for 3-4 minutes. This step locks in flavor for the Healing Ginger Turmeric Chicken Soup.
Step 4: Pour in the chicken broth, ensuring it mostly covers the chicken. Add the sliced carrots, celery, shiitake mushrooms (if using), and dried thyme. Bring the Healing Ginger Turmeric Chicken Soup to a boil, then reduce heat to low, cover, and simmer for 30 minutes, or until the chicken is cooked through and tender.
Step 5: Carefully remove the chicken thighs from the pot and place them on a cutting board. Let them cool slightly. While the chicken cools, taste the soup and adjust seasoning with salt and pepper as needed.
Step 6: Once cool enough to handle, remove the skin and bones from the chicken thighs. Shred the chicken meat using two forks or your hands. Return the shredded chicken to the pot with the Healing Ginger Turmeric Chicken Soup.
Step 7: Ladle the hot Healing Ginger Turmeric Chicken Soup into bowls. Garnish generously with fresh cilantro or green onions and serve with a lime wedge for a bright finish. Enjoy this comforting and restorative dish!
Notes
For an even richer broth, you can roast the chicken thighs before adding them to the pot. This soup also freezes beautifully; portion into airtight containers for quick meals later. Adjust spice levels by adding a pinch of cayenne or red pepper flakes if desired.
