4 medium sweet potatoes, scrubbed
1/2 cup unsalted butter, melted
2 tablespoons fresh rosemary, finely chopped
1 tablespoon fresh thyme, finely chopped
2 cloves garlic, minced
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon paprika
1 teaspoon sea salt
1/2 teaspoon black pepper
Fresh parsley or chives, for garnish (optional)

Instructions

Step 1: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Step 2: Wash and scrub the sweet potatoes thoroughly. Do not peel them.
Step 3: Place each sweet potato between two wooden spoon handles or chopsticks. Carefully slice crosswise at about 1/8-inch intervals, cutting almost all the way through but not severing the bottom.
Step 4: In a small bowl, melt the unsalted butter. Stir in the finely chopped fresh rosemary, thyme, minced garlic, garlic powder, onion powder, paprika, salt, and black pepper. Mix until well combined.
Step 5: Place the sliced sweet potatoes on the prepared baking sheet. Using a pastry brush, generously brush about two-thirds of the melted herb butter all over the sweet potatoes, ensuring some gets into the crevices.
Step 6: Bake for 45-60 minutes, or until the sweet potatoes are tender and slightly caramelized. Halfway through the baking time (around 25-30 minutes), remove from the oven and baste again with the remaining herb butter.
Step 7: Once baked, remove from the oven. Garnish with additional fresh herbs like chopped parsley or chives, if desired. Serve immediately.

Notes

For best results, choose sweet potatoes that are similar in size for even cooking. The wooden spoon handle trick is essential for safe and even slicing. Don't be afraid to gently open the slices during basting to ensure the butter penetrates thoroughly.
