Ingredients
1.5 lbs (680g) 80/20 ground chuck
1 large egg, lightly beaten
1/4 cup plain breadcrumbs (or panko)
1 tablespoon Worcestershire sauce
1 teaspoon garlic powder
1/2 teaspoon onion powder (optional)
1 teaspoon salt, or to taste
1/2 teaspoon black pepper, or to taste
Your favorite burger buns and toppings
Instructions
Step 1: In a large mixing bowl, gently combine the ground beef, egg, breadcrumbs, Worcestershire sauce, garlic powder, onion powder (if using), salt, and black pepper. Use your hands, but be careful not to overmix; mix just until everything is incorporated to ensure tender hamburger patties.
Step 2: Divide the meat mixture into four equal portions. Roll each portion into a ball, then gently flatten it into a disc about 3/4 to 1 inch thick. Ensure the edges are smooth and free of cracks to prevent crumbling of your hamburger patties.
Step 3: Using your thumb or the back of a spoon, create a small indentation (about 1/2 inch deep) in the center of each patty. This crucial step prevents the hamburger patties from bulging in the middle and helps them cook evenly.
Step 4: Place the formed hamburger patties on a plate or baking sheet lined with parchment paper. If not cooking immediately, cover and refrigerate for at least 30 minutes. This helps the hamburger patties hold their shape and allows flavors to meld.
Step 5: Preheat your grill, cast-iron skillet, or broiler to medium-high heat (about 400-450°F / 200-230°C). Lightly oil the cooking surface to prevent sticking.
Step 6: Place the hamburger patties on the hot cooking surface. Cook for 3-5 minutes per side for medium-rare, 5-7 minutes for medium, and 8-10 minutes for well-done, flipping only once. Avoid pressing down on the hamburger patties with your spatula to retain juices.
Step 7: If adding cheese, place a slice on top of each patty during the last minute or two of cooking, allowing it to melt beautifully over the hamburger patties.
Step 8: Remove the hamburger patties from the heat and let them rest for 5 minutes before serving. This allows the juices to redistribute, resulting in a more succulent burger.
Step 9: Serve your perfectly cooked hamburger patties on toasted buns with your favorite toppings like lettuce, tomato, onion, pickles, and condiments. Enjoy your homemade hamburger patties!
Notes
For the best flavor, use high-quality 80/20 ground chuck. Don't overmix the meat, and always make a thumbprint in the center of each patty to prevent bulging. Resting the patties after cooking is crucial for juiciness. These patties can be prepped ahead and refrigerated for up to 24 hours, or frozen for longer storage.
