Ingredients
1 lb large (21/25 count) shrimp, peeled and deveined
1-2 habanero peppers, minced (remove seeds and pith for less heat, wear gloves!)
1/4 cup fresh lime juice (from about 2-3 limes)
1 tbsp lime zest
2 tbsp olive oil
1 tbsp honey
2 cloves garlic, minced
1/2 tsp salt
1/4 tsp black pepper
Wooden skewers, soaked in water (or metal skewers)
Fresh cilantro, chopped, for garnish (optional)
Instructions
Step 1: In a medium bowl, combine the minced habanero pepper (wearing gloves), fresh lime juice, lime zest, olive oil, honey, minced garlic, salt, and black pepper. Whisk until well combined.
Step 2: Add the thawed and patted-dry shrimp to the marinade. Toss gently to coat all the shrimp. Cover and refrigerate for 20-30 minutes (do not marinate longer than 30 minutes).
Step 3: If using wooden skewers, soak them in water for at least 30 minutes. Preheat your grill or grill pan to medium-high heat.
Step 4: Thread the marinated shrimp onto the skewers, leaving a small space between each shrimp. Discard any remaining marinade.
Step 5: Lightly oil the grill grates. Place the shrimp skewers on the hot grill. Cook for 2-3 minutes per side, or until the shrimp are opaque, pink, and slightly charred.
Step 6: Remove from the grill. Garnish with fresh cilantro if desired and serve immediately with extra lime wedges.
Notes
Always wear gloves when handling habanero peppers. For less heat, remove all seeds and white pith. For a stronger citrus kick, serve with extra lime wedges. This dish is excellent with coconut rice or a fresh mango salsa.
