1 lb lean ground turkey (93%)
2 medium zucchinis, sliced into half-moons
1 small yellow onion, diced
3 cloves garlic, minced
1 tbsp olive oil
1 tsp dried oregano
1/2 tsp red pepper flakes (optional)
Salt and black pepper to taste
1/4 cup grated Parmesan cheese (optional)
Instructions
Step 1: Heat the olive oil in a large skillet over medium-high heat until shimmering.
Step 2: Add the ground turkey to the skillet, breaking it up with a wooden spoon. Cook for 5-7 minutes until browned and cooked through.
Step 3: Stir in the diced onion and cook for another 2 minutes until it begins to soften.
Step 4: Add the sliced zucchini, minced garlic, oregano, and red pepper flakes. Season generously with salt and pepper.
Step 5: Sauté the mixture for 5-6 minutes, stirring occasionally, until the zucchini is tender but still has a slight bite.
Step 6: Remove from heat, sprinkle with Parmesan cheese if desired, and serve immediately.
Notes
For the best texture, do not overcook the zucchini. It should be tender-crisp. You can substitute ground chicken or beef if preferred.
