Ingredients
1 lb 93% lean ground turkey
1 tbsp olive oil
1 medium red onion, diced
3 cloves garlic, minced
1 cup cherry tomatoes, halved
3 cups fresh baby spinach
1/2 cup kalamata olives, pitted and halved
1/2 cup feta cheese, crumbled
1 tsp dried oregano
1/2 tsp red pepper flakes (optional)
1 tbsp fresh lemon juice
Salt and black pepper to taste
Instructions
Step 1: Heat olive oil in a large skillet over medium-high heat until shimmering.
Step 2: Add the ground turkey to the skillet. Cook without stirring for 2 minutes to get a nice sear, then break it into crumbles and cook until no longer pink.
Step 3: Add the diced red onion and garlic to the turkey. Sauté for 3-4 minutes until the onions are soft and translucent.
Step 4: Stir in the dried oregano, red pepper flakes, salt, and black pepper. Add the cherry tomatoes and cook for 2 minutes until they start to soften.
Step 5: Add the baby spinach to the pan. Stir constantly for 1-2 minutes until the spinach has wilted completely.
Step 6: Remove the skillet from heat. Stir in the kalamata olives, feta cheese, and fresh lemon juice. Serve immediately.
Notes
For the best flavor, use 93% lean turkey instead of 99% fat-free. The little bit of fat helps carry the spices.
