Ingredients
1 lb ground chicken (preferably a mix of breast and thigh)
1/2 cup crumbled feta cheese
1/4 cup breadcrumbs (panko or gluten-free)
1/4 cup fresh parsley, finely chopped
1 tablespoon fresh mint, finely chopped
1 tablespoon lemon zest
2 cloves garlic, minced
1 small shallot, finely diced
1 teaspoon dried oregano
1/2 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil for frying
Instructions
Step 1: In a large mixing bowl, combine the ground chicken, crumbled feta, breadcrumbs, parsley, mint, lemon zest, minced garlic, diced shallot, oregano, salt, and pepper.
Step 2: Using your hands, gently mix the ingredients together until just combined. Do not over-mix, as this will result in tough meatballs.
Step 3: Roll the mixture into approximately 12-14 golf-ball-sized meatballs.
Step 4: Heat the olive oil in a large skillet over medium heat. Once the oil is shimmering, add the meatballs in a single layer, leaving space between them.
Step 5: Brown the meatballs for 3-4 minutes on each side, turning carefully with tongs until they are golden brown and cooked through (internal temperature of 165°F).
Step 6: Remove from heat and let rest for 5 minutes before serving with your favorite Mediterranean sides.
Notes
For the juiciest results, ensure you don't overcook the chicken. Using a meat thermometer is highly recommended.
