Ingredients
2 lbs pork tenderloin (usually 2 small tenderloins)
1/4 cup balsamic vinegar
3 tbsp olive oil
2 tbsp honey
3 cloves garlic, minced
1 tsp dried oregano
1/2 tsp salt
1/2 tsp black pepper
Instructions
Step 1: Trim the silverskin from the pork tenderloins using a sharp knife.
Step 2: In a small bowl, whisk together the balsamic vinegar, olive oil, honey, minced garlic, oregano, salt, and pepper.
Step 3: Place the pork in a large resealable bag and pour the marinade over it. Seal and refrigerate for at least 2 hours.
Step 4: Preheat your grill to medium-high heat (about 400°F) and lightly oil the grates.
Step 5: Remove the pork from the marinade and place it on the grill. Sear for 3-4 minutes on all sides.
Step 6: Move the pork to a cooler part of the grill (indirect heat) and close the lid.
Step 7: Cook for another 10-15 minutes or until the internal temperature reaches 145°F (63°C).
Step 8: Remove the pork from the grill and let it rest on a cutting board for 10 minutes before slicing into medallions.
Notes
Ensure the grill is properly preheated to get the best sear. Always use a meat thermometer for accuracy.
