Ingredients
1 large ripe pineapple
1/4 cup unsalted butter, melted
1/4 cup packed light brown sugar
1/2 teaspoon ground cinnamon

Instructions
Step 1: Prepare the Pineapple. Carefully slice off the top and bottom of the pineapple. Stand the pineapple upright and, using a sharp knife, slice away the tough outer skin in strips, following the curve of the fruit. Once peeled, you can either cut the pineapple into 1/2 to 3/4-inch thick rings (using a core remover if desired, or cutting around the core), or into long spears/wedges.
Step 2: Make the Glaze. In a small bowl, whisk together the melted unsalted butter, light brown sugar, ground cinnamon, and a pinch of salt until well combined. The consistency should be a thick, brushable glaze.
Step 3: Preheat the Grill. Preheat your grill (charcoal or gas) to medium-high heat (around 375-400°F or 190-200°C). Lightly oil the grill grates to prevent sticking.
Step 4: Glaze the Pineapple. Brush each side of the pineapple slices or spears generously with the brown sugar glaze. Ensure an even coating for optimal caramelization.
Step 5: Grill the Pineapple. Place the glazed pineapple directly on the preheated, oiled grill grates. Grill for 3-5 minutes per side, or until beautiful golden-brown grill marks appear and the pineapple is tender and caramelized. Watch carefully to prevent burning due to the sugar content in the glaze.
Step 6: Serve Immediately. Remove the grilled pineapple from the grill and serve warm. It's fantastic on its own or with your favorite toppings.
Notes
For best results, use a very ripe pineapple. If you don't have a grill, you can use a grill pan on your stovetop, ensuring it's well-oiled and hot.
