1/4 cup olive oil
3 tablespoons fresh lemon juice
1 tablespoon apple cider vinegar
2 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon dried thyme
1/2 teaspoon salt

1/2 teaspoon smoked paprika
1/4 teaspoon red pepper flakes (optional)
1.5-2 lbs boneless, skinless chicken breasts (4 pieces)
Instructions
Step 1: In a medium bowl, combine olive oil, fresh lemon juice, apple cider vinegar, minced garlic, dried oregano, dried thyme, salt, black pepper, smoked paprika, and optional red pepper flakes. Whisk everything together until well combined.
Step 2: Place chicken breasts into a large, resealable plastic bag or a shallow, non-reactive dish.
Step 3: Pour the prepared marinade over the chicken, ensuring all pieces are thoroughly coated. Seal the bag or cover the dish.
Step 4: Refrigerate for at least 30 minutes, or for best results, 2 to 4 hours. You can marinate overnight (up to 12 hours) for deeper flavor.
Step 5: Preheat your grill to medium-high heat (400-450°F or 200-230°C). Clean and lightly oil the grill grates.
Step 6: Remove chicken from the marinade, letting excess drip off. Discard the remaining marinade.
Step 7: Place chicken breasts on the hot grill. Grill for 5-7 minutes per side, depending on thickness, until internal temperature reaches 165°F (74°C).
Step 8: Remove chicken from the grill, transfer to a clean cutting board, tent with foil, and let rest for 5-10 minutes before slicing and serving.
Notes
For best flavor, ensure you marinate for at least 2 hours. If you don't have fresh herbs, you can use 1/2 teaspoon of dried herbs for every tablespoon of fresh herbs called for, but adjust to taste. Always let your chicken rest after grilling; it makes a huge difference in juiciness!
