Ingredients

1.5 lbs fresh green beans, trimmed and halved
1 lb Cremini mushrooms, sliced
3 tablespoons unsalted butter
2 cloves garlic, minced
1/4 cup all-purpose flour
1.5 cups whole milk
1/2 cup heavy cream
1/2 teaspoon ground nutmeg
1.5 cups crispy fried onions
1/2 cup panko breadcrumbs
Salt and black pepper to taste

Instructions

Step 1: Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish.
Step 2: Blanch the green beans in boiling salted water for 5 minutes, then immediately plunge into an ice bath. Drain well and set aside.
Step 3: In a large skillet, melt butter over medium heat and sauté mushrooms until browned. Add garlic and cook for 1 minute.
Step 4: Sprinkle flour over mushrooms and cook for 2 minutes, stirring constantly.
Step 5: Slowly whisk in milk and heavy cream. Simmer until the sauce thickens, about 5-7 minutes. Season with salt, pepper, and nutmeg.
Step 6: Stir the blanched green beans into the sauce until well coated.
Step 7: Pour the mixture into the prepared baking dish. Top with a mixture of fried onions and panko breadcrumbs.
Step 8: Bake for 25-30 minutes until the top is golden brown and the sauce is bubbling.

Notes

If using frozen green beans, ensure they are completely thawed and patted dry before adding to the sauce to avoid a watery casserole.
