Crunchy, creamy, and utterly satisfying, these Greek Yogurt Peanut Granola Clusters are the perfect make-ahead snack. Made with wholesome ingredients like Greek yogurt, peanut butter, and rolled oats, they offer a burst of energy and flavor in every bite.

Ingredients

1 cup plain full-fat Greek yogurt
1/2 cup natural creamy peanut butter
1/4 cup honey or maple syrup (adjust to taste)
1 teaspoon vanilla extract
2 cups old-fashioned rolled oats
Pinch of sea salt (optional, if peanut butter is unsalted)
1/4 cup mini chocolate chips or chopped nuts (optional)

Instructions

Step 1: Line a baking sheet (approx. 9x13 inches) with parchment paper, leaving an overhang on the sides for easy lifting.
Step 2: In a large mixing bowl, combine the Greek yogurt, peanut butter, honey (or maple syrup), and vanilla extract. Whisk until completely smooth and well-combined.
Step 3: Add the rolled oats and optional sea salt to the wet mixture. Fold with a spatula until all oats are thoroughly coated. If using, fold in mini chocolate chips or chopped nuts at this stage.
Step 4: Transfer the mixture to the prepared baking sheet. Using the back of a spoon or a spatula, spread it evenly into a single layer, about 1/2 to 3/4 inch thick. Press down very firmly to compact the mixture; this helps the clusters hold together.
Step 5: Place the baking sheet in the refrigerator and chill for at least 2-3 hours, or preferably overnight, until the mixture is completely firm.
Step 6: Once firm, lift the parchment paper from the baking sheet. Break the large slab into irregular clusters of your desired size. Store the Greek Yogurt Peanut Granola Clusters in an airtight container in the refrigerator for up to 1 week, or freeze for longer storage.

Notes

For extra crunch, lightly toast the rolled oats in a dry pan for 5-7 minutes before adding them to the mixture. If you prefer a less sweet cluster, reduce the amount of honey or maple syrup. Store these clusters in an airtight container in the refrigerator to maintain their firmness.
