Instructions
Step 1: In a medium-sized heatproof bowl, sprinkle the unflavored gelatin powder over 1/2 cup of cold water. Allow it to 'bloom' for 5-10 minutes until it thickens.
Step 2: In a small saucepan, bring 1 cup of water to a gentle simmer. Pour the hot water over the bloomed gelatin mixture and whisk continuously until the gelatin is completely dissolved and the mixture is clear.
Step 3: Add the freshly squeezed lemon juice and your preferred natural sweetener (if using) to the dissolved gelatin mixture. Whisk until the sweetener is fully dissolved.
Step 4: Stir in the remaining 1 1/2 cups of cold water to cool down the mixture.
Step 5: Gently fold in the fresh mixed berries into the gelatin mixture, distributing them evenly.
Step 6: Pour the mixture carefully into individual serving dishes, ramekins, or a single large mold. Place in the refrigerator.
