1/4 cup natural sweetener (erythritol, stevia blend, or monk fruit, adjusted to taste)
1 tablespoon fresh lemon juice (optional, for brightness)
Instructions
Step 1: In a medium-sized bowl, sprinkle the unflavored gelatin powder evenly over the 1/4 cup of cold water. Let it sit for 5-10 minutes to bloom. The gelatin will absorb the water and become a thick, opaque paste. This step is crucial for preventing lumps in your final gelatin.
Step 2: While the gelatin is blooming, bring 1 3/4 cups of water to a boil. You can do this in a kettle or a saucepan.
Step 3: Pour the boiling water over the bloomed gelatin in the bowl. Stir continuously with a whisk until the gelatin is completely dissolved. Ensure there are no granules remaining. The mixture should be clear.
