A refreshing, low-calorie, and high-protein gelatin dessert packed with antioxidants from mixed berries, designed to support weight management and satisfy sweet cravings. This easy-to-make recipe is a delicious way to incorporate the benefits of gelatin into your diet.

  • Total Time: 4 hours 20 minutes (includes chilling)
  • Yield: 4 servings 1x

Ingredients

Scale

1/4 cup cold water (for blooming gelatin)
2 tablespoons unflavored gelatin powder (approx. 2 packets)
1 3/4 cups boiling water
1/2 cup mixed berries (fresh or frozen, e.g., strawberries, blueberries, raspberries)
1/4 cup natural sweetener (erythritol, stevia blend, or monk fruit, adjusted to taste)
1 tablespoon fresh lemon juice (optional, for brightness)

Instructions

Step 1: In a medium-sized bowl, sprinkle the unflavored gelatin powder evenly over the 1/4 cup of cold water. Let it sit for 5-10 minutes to bloom. The gelatin will absorb the water and become a thick, opaque paste. This step is crucial for preventing lumps in your final gelatin.
Step 2: While the gelatin is blooming, bring 1 3/4 cups of water to a boil. You can do this in a kettle or a saucepan.
Step 3: Pour the boiling water over the bloomed gelatin in the bowl. Stir continuously with a whisk until the gelatin is completely dissolved. Ensure there are no granules remaining. The mixture should be clear.
Step 4: Add the natural sweetener and fresh lemon juice (if using) to the hot gelatin mixture. Stir until the sweetener is fully dissolved. Taste and adjust sweetness if desired, remembering it will taste less sweet when cold.
Step 5: Allow the mixture to cool slightly at room temperature for about 10-15 minutes. This prevents the berries from sinking immediately to the bottom when added.
Step 6: Gently fold in the mixed berries. You can leave them whole or roughly chop larger berries like strawberries. Distribute them evenly throughout the gelatin mixture.
Step 7: Carefully pour the gelatin mixture into individual serving dishes, ramekins, or a larger mold. For best results, use small, portion-controlled containers, which are great for this gelatin weight loss recipe.
Step 8: Refrigerate for at least 4 hours, or preferably overnight, until the gelatin is fully set and firm. Serve chilled and enjoy your healthy Berry Blast Gelatin Delight!

Notes

For an even richer berry flavor, you can lightly mash a quarter of the berries before adding them to the cooled gelatin mixture. For a thicker set, add an additional 1/2 tablespoon of gelatin powder.
