Ingredients
2 lbs small waxy potatoes (Yukon Golds, red potatoes, or new potatoes)
4 cloves garlic, minced
2 tbsp fresh rosemary, finely chopped
1 tbsp fresh thyme, finely chopped
1/2 cup extra virgin olive oil
1 tsp sea salt, or to taste
1/2 tsp black pepper, or to taste
2 tbsp fresh parsley, chopped (for garnish, optional)
Instructions
Step 1: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
Step 2: Wash potatoes thoroughly. Place them in a large pot and cover with cold water by about an inch. Add a generous pinch of salt. Bring to a boil, then reduce heat and simmer until fork-tender, about 15-20 minutes.
Step 3: Drain the potatoes very well in a colander. Allow them to air dry for a few minutes, or pat them dry with a clean kitchen towel to remove excess moisture.
Step 4: Arrange the boiled and dried potatoes on the prepared baking sheet, leaving some space between each one. Using the bottom of a glass or a potato masher, gently press down on each potato until it's about 1/2 to 3/4 inch thick, creating irregular edges.
Step 5: In a small bowl, combine the minced garlic, finely chopped rosemary, finely chopped thyme, olive oil, sea salt, and black pepper. Mix well until everything is evenly coated.
Step 6: Spoon or brush the garlic-herb-oil mixture generously over each smashed potato, ensuring all surfaces are well-coated.
Step 7: Bake for 25-30 minutes. Carefully flip the potatoes and continue baking for another 20-25 minutes, or until deeply golden brown and incredibly crispy on all sides.
Step 8: Once out of the oven, transfer the Garlic Herb Crispy Smashed Potatoes to a serving platter. Garnish with fresh chopped parsley if desired, and serve immediately.
Notes
For extra crispiness, ensure potatoes are completely dry before smashing and roasting. Don't overcrowd the baking sheet; use two if necessary. Leftovers can be reheated in a hot oven or air fryer for best results.
