Ingredients
1 lb paneer, cut into 1-inch cubes
1 large head of broccoli (about 1.5 lbs), cut into bite-sized florets
2 tbsp olive oil
1 tbsp fresh ginger, minced
3 cloves garlic, minced
1.5 tbsp garam masala
1 tsp ground turmeric
0.5 tsp red chili powder (or to taste)
0.5 tsp ground cumin
0.5 tsp ground coriander
0.75 tsp salt (or to taste)
Fresh cilantro, chopped (for garnish)
Lemon wedges (for serving)
Instructions
Step 1: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
Step 2: In a large bowl, combine the olive oil, minced ginger, minced garlic, garam masala, turmeric, red chili powder, ground cumin, ground coriander, and salt. Whisk until well combined.
Step 3: Add the paneer cubes and broccoli florets to the bowl with the spice mixture. Toss thoroughly until the paneer and broccoli are evenly coated.
Step 4: Spread the marinated paneer and broccoli in a single layer on the prepared baking sheet. Ensure there is enough space between the pieces for even roasting. If necessary, use two baking sheets.
Step 5: Bake for 15 minutes. The broccoli should start to become tender-crisp.
Step 6: Carefully remove the baking sheet from the oven and, using a spatula, flip the paneer and broccoli. Return to the oven and bake for another 10-15 minutes, or until the paneer is golden brown and the broccoli is tender with slightly charred edges.
Step 7: Remove from the oven. Garnish with fresh chopped cilantro and serve immediately with lemon wedges.
Notes
For best results, ensure the paneer and broccoli are in a single layer on the baking sheet to roast evenly and get crispy. Do not overcrowd the pan. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated gently.
