An easy, healthier take on a classic candy bar, these Frozen Banana Snickers Bites feature creamy banana slices topped with peanut butter and crunchy peanuts, all coated in a rich dark chocolate shell. A perfectly satisfying sweet and salty treat!

3 medium ripe bananas
1/2 cup creamy peanut butter (natural, unsweetened preferred)
1/4 cup chopped roasted peanuts
1 cup dark chocolate chips or chopped dark chocolate (60-70% cacao)
1 teaspoon coconut oil (optional, for smoother melting)
Flaky sea salt (optional, for sprinkling)

Instructions

Step 1: Line a large baking sheet with parchment paper or a silicone mat. This will prevent sticking.
Step 2: Peel and slice the bananas into 1/2-inch thick rounds. Arrange them in a single layer on the prepared baking sheet.
Step 3: Spread about 1/2 teaspoon of peanut butter onto one side of each banana slice. Aim for a thin, even layer.
Step 4: Sprinkle the chopped peanuts evenly over the peanut butter layers, gently pressing them down to secure.
Step 5: Place the baking sheet in the freezer for at least 30 minutes, or until the banana slices are firm.
Step 6: While the bananas are freezing, prepare the chocolate coating. In a microwave-safe bowl, combine the dark chocolate chips and coconut oil (if using). Microwave in 30-second intervals, stirring well after each, until completely melted and smooth. Alternatively, melt over a double boiler.
Step 7: Remove the frozen banana pieces from the freezer. Dip each banana bite into the melted chocolate, ensuring it's fully coated. A fork can be helpful to lift and drain excess chocolate.
Step 8: Place the chocolate-coated Frozen Banana Snickers Bites back onto the parchment-lined baking sheet. If desired, immediately sprinkle with a pinch of flaky sea salt.
Step 9: Return the baking sheet to the freezer for another 15-30 minutes, or until the chocolate is completely set and firm.
Step 10: Once fully frozen, transfer the Frozen Banana Snickers Bites to an airtight freezer-safe container. Store in the freezer for up to 2-3 weeks. Enjoy straight from the freezer!

Notes
