4 cups corn kernels (fresh, frozen, or canned, drained)
1 cup sour cream (full-fat or light)
1/2 cup mayonnaise (full-fat recommended)

1-2 jalapeños, seeded and minced (optional, for heat)
1 cup shredded sharp cheddar cheese
1 tablespoon lime juice
1 teaspoon chili powder
1/2 teaspoon garlic powder

8 ounces Frito corn chips (original, added just before serving)
Instructions
Step 1: Prepare the corn. If using fresh corn, cook and slice kernels from the cob. If using frozen, thaw and drain well. If using canned, drain and rinse thoroughly, then pat dry. Ensure corn is cool.
Step 2: In a large mixing bowl, combine the sour cream, mayonnaise, lime juice, chili powder, garlic powder, salt, and pepper. Whisk until smooth and well combined.
Step 3: Add the prepared corn kernels, finely diced red onion, red bell pepper, shredded cheddar cheese, and optional minced jalapeños and chopped cilantro to the bowl with the dressing.
Step 4: Gently fold all ingredients together until everything is evenly coated in the creamy dressing. Be careful not to overmix.
Step 5: Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld. This step is crucial for the best taste.
Step 6: Just before serving, add the Frito corn chips to the salad. Gently fold them in until they are evenly distributed. Do not add Fritos too early, or they will become soggy.
