18 Double Stuf Oreo cookies
1 cup pancake mix
2/3 cup milk
1 large egg
2 teaspoons vegetable oil (plus more for frying)
Powdered sugar for dusting
Instructions
Step 1: Pour vegetable oil into a deep skillet or pot until it is about 2-3 inches deep. Heat the oil to 375°F (190°C) over medium heat.
Step 2: In a medium mixing bowl, whisk together the pancake mix, milk, egg, and 2 teaspoons of vegetable oil until the batter is smooth and lump-free.
Step 3: Dip an Oreo cookie into the batter, ensuring it is completely and thickly coated on all sides.
Step 4: Carefully place the coated cookie into the hot oil. Repeat with 3-4 more cookies, being careful not to overcrowd the pot.
Step 5: Fry for about 1-2 minutes per side, or until the batter is puffed and golden brown.
Step 6: Use a slotted spoon to remove the fried Oreos and transfer them to a plate lined with paper towels to drain excess oil.
Step 7: While still warm, dust generously with powdered sugar and serve immediately.
